Dates n Nuts Balls

These energy balls are a healthy snack that you can make in a jiffy. Bursting with energy with the right dose of fat, fibre and carbs, these are rich in antioxidants too.

Ingredients:

Chopped Nuts (Pecan, Almonds, Walnuts, Cashew) – 1 cup

Dessicated coconut powder – 1/4 cup

Cocoa – 1/4 cup

Powdered pistachois – 1/4 cup

Flax seeds – 3 tbsp

Pitted Dates – 1 1/2 cup

Vanilla essence – 1/4 tsp

Cardamom powder – 1/4 tsp

Ghee or butter – 1 1/2 tsp

Salt – less than 1/4 tsp

Preparation:

In a pan, heat 3/4 tsp butter or ghee. Add the chopped nuts and saute it well. When they turn golden in colour, take it off the pan and keep it aside.

Add 3/4 tsp of ghee or butter and add the chopped pitted dates and saute well. When it starts to get mushy, add the fried nuts, vanilla essence, cardamom powder, salt and stir it well to combine.

Take it off the pan and when it turns slightly cool, roll them into balls. Coat the balls in powdered pistachios or cocoa powder or dried shredded coconut or flax seeds.

Wheat Carrot Cake

Made with the goodness of carrots, these wheat cakes are moist and delicious. Easy and made with kitchen staples, this one is a must try.

Ingredients:

Wheat flour – 2 1/2 cups

Baking powder – 2 tsp

Soda bi-carbonate – 1/2 tsp

Eggs – 5

Oil – 1 1/2 cups

Salt – 1/2 tsp

Sugar – 2 cups

Grated carrot – 2 1/2 cups

Vanilla essence – 2 tsp

Chopped walnuts – 1/4 cup (optional)

Preparation:

Sift wheat flour, baking powder, soda bi-carbonate and salt. Mix well and keep aside.

In a mixer, powder the sugar finely.

Separate the yolks and whites. Froth the egg whites and keep separately.

In a deep wide bowl, add the sugar and oil. Beat it on high in an electric hand beater/mixer and then add the yolks and beat again for 4 to 5 minutes. Next, add the vanilla essence and grated carrot and beat well. Now, reduce the speed of the beater to minimum or with a spatula, slowly fold in the flour. Gradually, add the beaten egg whites and mix gently. Make sure that you do not vigorously mix the batter as the cake will rise and fall flat when it bakes.

Grease a 8×2 inches circular pan with butter or oil. Pour the mixture into it. Bake at 180 degree celsius for 45 – 60 mts. Check to ensure that it is baked by inserting a toothpick into the middle of the cake after 45 minutes. If the batter does not stick to the tooth pick, the cake is baked or else, bake for some more time.

Avocado Ice Cream

An healthy and easy home made ice-cream which tastes amazing. It can be made in a jiffy and you do not need an ice-cream maker to make this.

Ingredients:

Full fat coconut milk can – 1/2 can or 200 ml

Avocado – 1

Ripe long banana ( pref. Chiquita or Del monte) – 1/2

Honey – 3 tbsp (add more if u want it sweeter)

Lime juice – 1/2 tsp

Preparation:

Cut the bananas and freeze it for 30 minutes.

Chill the pan in which you are going to pour the ice cream, for 1 hr in the fridge.

In a blender, add the peeled and cut avocados, coconut milk, bananas, lime juice, honey and blend until it is smooth and creamy.

Pour it into the chilled pan immediately and cover it with cling film and freeze it for 6 hours. Make sure the cling wrap touches the top of the ice cream so that it doesn’t get discoloured. Also, every 1/2 hr, make sure to take it out and beat it again with an electric hand beater. Repeat this procedure thrice. This is also to prevent formation of ice crystals.

Serve when it slightly starts to melt, garnished with toasted pistachois or almonds.

This ice-cream does not store well. So, make as much as you want only and enjoy.
